AGoogle "fondant ruffle cake tutorial" there tons of them out there. There's also a craftsy class dedicated to this very style might want to check it out

Thanks so much.. I thought about Craftsy too.. I have purchased several of the courses from there .. I will google too and see what I can find! :)

For my recent cake, I Googled and searched YouTube for all the free help I could find.  There are lots of tutorials out there.  

 

Some of the better ones for me included:


 

Ruffling is very time intensive.  This 8-12-16 took about 6-7 hours.  I used a 50/50 gumpaste/fondant mix, rolled to a 3 on my KA pasta roller, frilled the edge, then did another two strips while the first set up a bit.  I did NOT try to have strips long enough to go all the way around (well, OK, I started trying, but found that 12 inches or so is about as much as I could handle, esp at 3am!!)  I overlapped my strips by 1/2" and continued on around.
