Hi everyone - I'm brand new here and I've come along because I'm in a bit of a pickle. I have been asked to make my daughter's wedding cake - she wants a stack of three cakes and wants (ideally) for me to make sponges. I'm worried they will be dry if I make them ahead of time (I have no way of freezing them). I need advice about others who have made sponges a few days ahead. Should I put the buttercream on them and put them in the fridge - will that preserve them an extra day or two? Also, is anyone able to link me to a recipe which is suitable for doubling and tripling to make the sponges, please? I hope that all makes sense - to be honest, I'm feeling a little confused and out of my depth, even though I've been baking cakes for almost 50 years!! Never been asked to make a wedding cake before. Don't even get me started about my nerves regarding the stacking process! Thanks so much for any assistance!
