Here's the recipe I follow.
1 lb strawberries
1 c sugar
1 tsp lemon juice
1 envelope gelatin
2 egg whites
1 c heavy cream
I cook the strawberries, sugar, and lemon juice, Then I add the bloomed gelatin and refrigerate it until set. Whip the egg whites, fold it together, then whip the cream and fold it in.
I don't think I let my gelatin bloom long enough though, as the mousse is a bit soupy. I was thinking of folding in some more bloomed gelatin. Is it too late? Would that help at all?
Lesson learned: don't rush the process! Ha ha!
