Whipped Cream For Parfait

I am making banana pudding and chocolate mousse parfaits for my sister's wedding. I plan to make these thursday for the Saturday wedding. The more I think about it though, I'm concerned about the whipped cream. When I make this and put it in the fridge, it typically starts separating and deflating after a day. Will it do that in the parfait before Saturday?  Anyone have any solutions to this problem?!?
