I had long wanted to learn how to decorate cakes before I came across Tous Les Jours Bakery.  It took seeing the beautiful artwork of these cakes for me to actually take courses.

 

However, despite my 4-course Wilton training, I still don't know how to produce the round, puffy perfection of this whipped cream icing ...

 

 

 

... and the detailing shown here ...

 

 

 

Does anyone out there know???  This is what I want to learn!

I the puffy edge is made with a flexible spatula, have you checked youtube? there are a number of tutorial videos there.

AThe bottom picture is swirled drops of sauce (or something thin). The cake is iced, the dark sauce is put in, then drops of white are put along the edge of the dark and swirled with a pick. There's a bit more to it than that, but the design options are endless once you figure out a pattern.
