AAmerican buttercream just ticks me off. Yeah, it's tasty swirled on top of a cupcake and makes a good filling, but that stuff is the devil under fondant. Did fondant steal its boyfriend in tenth grade? Why can't they just get along? I've mastered SMBC, IMBC and ganache but my skill set stops at ABC. I'd just give up on it, but our kids' taste buds are so geared towards that super sugary icing that they turn their cute little noses up at SMBC and IMBC. Adults generally love the meringue icings, but mixed crowd parties present a dilemma to me. Does anyone else out there get the same reaction?

Stupid yummy American buttercream.

I've never had a problem with it under fondant. I don't particularly like how sweet it is though.
