Hi everyone

 

Just wondering if anyone would be willing to share their favourite ganache recipe?

 

I'm looking for a recipe which doesn't need refrigeration. I live in Australia and the summer months can be quite warm (35C), so I don't know if this is even possible.

Hi Lena

Love to see your post, I think there is no such recipe for summer, but you can try some of these down. These cakes remains fresh for 3-4 days. Hope this will help.

Lena87: it depends on what you're going to do with it.  Pour it on something, spread it with a spatula, or pipe it.

AHi Lena87, I'm in australia too! I always use ganache under my fondant, it gives the best sharp lines. For your fondant base, always use 2.1 ratio for dark chocolate ( eg: 400 g chocolate and 200 g cream ) and 3.1 ratio for white ( eg: 600g chocolate to 200 g cream ) this is perfect for covering and filling. If its summer or really hot ( our crazy weather! ) just keep the ac on as you need it to set ( preferably overnight ) properly as the fondant won't go on smoothly other wise.

AOooppps!!! I forgot to add, there is no refrigeration needed! Just make sure the room is cool.
