Sweating Fondant...

Hi All

 

My first post, i ve been decorating cakes for a year now and all is going well, apart from the sweating fondant issue, i ve read all post relating and nothing is helping. I live in barcelona so i had thought it was a heat and humidity problem, non of my fondant goes near a fridge and it s even happening when i make a quick 3D model....i understand why it sweats but still 12 hours late and its not dried out...it also seems to be the highly coloured fondant that it the worse.

 

Any suggestion would greatly be appreciated . Thank you

I read somewhere people in high humidity areas place a fan next to the cake to help get rid of the condensation. Not sure if it would help, but I guess it is worth a try! Make sure the fan blades are clean. :)

maybe add more powdered sugar to the fondant?

Sugar attracts water, so adding more powdered sugar won't help. 

 

You may get some relief if you add some tylose/gum trag/cmc to your fondant.  You'll need to experiment to see what amount works best.
