Decorating Cupcakes A Day Before An Event?

  • my mom's co-woker ordered cupcakes from me and she wants meringue icing so i used this recipe: 
  • 2 large egg whites
  • 1 cup sugar
  • 1/4 teaspoon cream of tartar
  • 1/3 cup water
  • 1/8 teaspoon salt
  • 1 teaspoon vanilla extract
  • she's gonna bring it to her tomorrow morning (it's 6pm here in the philippines) and i'm thinking of decorating it tonight at about 9pm, but i'm afraid it might melt or the colors will bleed (i'm coloring the icing) since it's not like buttercream. please help,  thank you!!!!!!

That frosting should be okay overnight, but you need to make sure you beat your egg whites stiff enough and use the cream of tartar, which helps to stabilize it. 

 

You can try an easier version of this recipe so you don't have to cook the sugar. I have used this recipe for years. It's in my mother's recipe box from when I was a child.

I honestly have never colored this frosting - have always used it pure white, so I'm not sure about colors bleeding.
