I'm making my first wedding cake and (its for tomorrow) and realized that I didnt figure out how long it can sit out.

The buttercream recipe I used is butter, shortening, powdered sugar, meringue powder and heavy cream. There is about 1/4 cup cream per pound of sugar.

The filling on the cake is just buttercream (no jams, etc...)

How long is it ok to set out? The reception is at 3 but cake probably wont be until about 4. If I take it out at 1pm do you think it will be at room temp by then and will it be ok to eat at 3 hours out.

Thank you! I'm so nervous to be serving to a bunch of people that arent family!
