After I ganache my cake, can I refrigerate it?

 

I would like to refrigerate , then cover with fondant, and then refrigerate again until it leaves for delivery

Yes, you can refrigerate a cake that has been ganached. The chocolate will firm up quite hard.

Is there something else in your cake that needs to be in the fridge?

If the cake is refrigerated after it's been ganached, it should come back to room tempertature before you add the fondant. If you add fondant to a cake that is still cold, chances are condensation will form on top and you may get a few air bubbles. It should only go back in the fridge if it has a perishable filling; if it's just filled with ganache then it can stay out on the bench.
