Need Advice On Rock Candy - Going A Little Soft

I am making my nephew a Coke cake similar to this:

So I did some searching and I liked this recipe for rock candy because it had good instructions.

So I made it (my first time) and everything seemed to be perfect. I was able to mold the 'pouring Coke' around a dowel and I used a hammer to smash the remainder of the pieces in 'ice cubes'.  It was nice and cool by the time I was going to bed so I left it on wax paper and lightly put another piece of wax paper over the top just to make sure a fly wouldn't come along and stick to it or something. This morning, it's really sticky. It's not hard like it was last night. It's not really soft but you can definitely push your finger into it a little and move it around a bit.  All the pieces of 'ice' are pretty much stuck together too. I can pull them apart but again, the outside of them is kinda soft.  It's really humid and damp here this week. I wonder if that could cause that or perhaps I made a mistake when I made the rock candy? I'm just wondering if anyone has any experience with anything like this?  I had wanted to assemble this cake for tonight so I could have it ready for tomorrow's party. Maybe it should be kept in the fridge?  Any tips would be greatly appreciated :)
