i tried this recipe and made it twice, the 2nd time I cut back on the cinammon and it was perfecto!!

 

I found it worked better as little cupcakes vs 1 cake :)

 

Thanks for the recipe, it's a keeper for me :)

I said I'll hold back on the nutmeg next time but I thought the cake was more moist than the cupcakes

I'm trying this tomorrow with the pineapple, nuts, and cranberries. I usually like raisins in mine, but the cranberries are intriguing. Plus, if it works out it will separate my carrot cake from others'. Thanks for sharing! I'll post again after I make mine.

I added a 1/2-3/4 cup of well drained crushed pineapple to the recipe along with raisins, pecans, and coconut. It was a huge hit at Easter.

AMade this tonight exactly as written and it turned out lovely; except for the baking soda taste. I know my measurements were right, what could be the problem?
