Flowers With Jewelled Centres??

Hi, it's me :) I want to get started with making gumpaste flowers and I love the look of those big open flowers with the rhinestone/jewelled centres. I'm not sure if they are called Peonies, or just fantasy flowers, or something else. Can anyone point me in the right direction for a tutorial on how to make them? I'd love to put one on my friend's going away cake I'm making in a couple of months, so would like to get  practising now. 

 

And is gumpaste the right medium? It's hot and humid where I live, so I need something that won't flop completely when I'm making them and something that dries quickly.

Your welcome.  By the way if you don't have the veiner, I did something like that with a sea shell.

AThat's such a great idea. I don't have a veiner (I would have bought one) but I do have a bucket of seashells. Your flower is beautiful. It looks like it's made out of fabric, not icing! Lol! So well done!
