I'm looking for a good icing for my chocolate coconut poke cake, but I'm not a fan of Cool Whip or Whipped Cream.  Suggestions?

AYou can use your favorite icing recipe, but instead of vanilla, use coconut flavoring, then add a bunch of shredded coconut.

AI thought about a flour based icing, because the poke ingredients are so sweet, but I'm not sure how it will hold up in the refrigerator.

AWhy do you have to keep it in the fridge? Is there a filling that is perishable? If not, it should not matter.
