Need Firm Cookie Recipe To Make Tarts

I am looking for a very firm cookie that can be baked and then frozen and defrost still firm.   I intend to use it for shell base on some nonbaked cheesecake type pastries.  I did that about 5 years ago for a friend's wedding table.  Do you think I can remember the cookie..oh no~  help does anyone have a recipe or know the cookie?  I have already tried the shortbread tart recipes and not happy when I freeze and thaw the tarts... get too soft.  Would appreciate any help or suggestions on this.
