AMy nephew's wedding in in exactly one week! He has asked me to make his grooms cake. ( I'm totally excited) I need help with a few things...... I am making a 2 tier cake that will be a road with 3 small vehicles, a cave, trees, fence, etc..... It will be decorated with buttercream and fondant. I have a few questions that I need help with. I'm a home baker, so I don't have a lot of skills :) I do have a fridge/freezer just for cakes, so nothing else will be in their but the cakes.
1. How do I freeze the cake? Already leveled and torted? 2. Do I freeze it with buttercream already frosted on it? 3. How far in advance can I take it out of freezer and begin decorating it? I want it to be fresh for next Saturday :) 4. How far in advance can I put buttercream on the cake before I actually put the fondant on it?
