I recently posted this in the cupcake forum but didn't get any responses so I thought I would try this one. I sell cupcakes at a local farmers' market in New York State. It's July so the heat and humidity have hit and my chocolate buttercreme has been a nightmare. It's delicious but I fight with it every week. Does anyone have a delicious chocolate frosting recipe that doesn't require refrigeration that can stand the heat and humidity? Thanks so much for your help!!

My recipe is: 1 cup unsalted butter, 3 1/2 cups conf. sugar, 1/2 cup cocoa powder, 1/2 teaspoon salt, 2 teaspoons vanilla and 4 tablespoons milk.

Well, you've already got powdered sugar in there to stiffen it up.  Your best option would be to get some kind of cooler or refrigeration to keep the product from melting.  Some other choices - sub some shortening for butter, maybe try a ganache?
