Fave Under Fondant Icing

Hi,

 

I am making my first wedding cake in August and so, testing out different recipes.

 

I have tried genache, but I prefer that as a filling rather then a icing..

I am not too big on buttercream with shortenings, but open to try different variations.

 

I would love to know what your favorite under fondant icing recipes are and how long can they be made in advance!

Hi,

I'm fairly new to all this but in different trials, I found that Swiss buttercream worked best. I don't  like buttercreams with shortening either and 99% of the time refuse to use them. The nice thing about Swiss meringue is that you can add shortening for stability at the end depending on the humidity in your area. I haven't done a wedding cake yet...my largest cake was the SuperMario Bros. cake with the xbox.

I have two favorites.  Swiss Meringue Butter Cream and Ganache.  I can get them both really smooth before fondant.  I use  BeyondButtercream (FromScratch, SF) recipe.  Here's her tutorial:
