What can I do to keep my purple gumpaste or fondant from fading into a blue/gray color within a few days?  I need to make flowers ahead of time and from previous experience I know they are going to fade out.

I've heard the best way is to colour them, leave them til they fade and then use purple petal dust on them to make the colour back to what you want.

Keep them out of the light - it's the pink that fades. They should be fine in something like a shoebox placed inside a black garbage bag for extra protection. I have black plastic that I lay over decorations.
