3 Tier Cake (Dummy Mixed With Cake)

AI want to do a run through of a wedding cake for my bro in law and his wife to be, to make sure i know extactly what they want etc... i am doing a 3 tier cake i was planning on using cake for the bottom layer (which is a 12" as i havent cooked one this big before and need to know the timings etc...) then for the middle tier (10") and top (8") i was gonna use dummy cakes (just for the run through so i dont have to waste cake, not the real thing) but do i just decorate them like i would a cake (like on a thin board) and do i need to use dowels in them i have never used dummy cakes before (havent even brought them yet lol) Any advice would be great :-) Thank you in advance
