Hi everyone, I helped a fellow co-worker with 200 gumpaste decorations to go on cupcakes and a large cake the size of 2 sheet cakes. My co-worker decorated the cake and cupcakes. everything looked great. she put the finished cake and 200 cupcakes in a large walk in refrigerator until the next day. for about an 18 hour period. well the next morning all the gumpaste decorations were melting.they were wet and sticky. I have always refrigerated cakes with gumpaste decorations at home in a home refrigerator., and never had any problems.does any one know why this would happen in a large walk in refrigerator. We work in a military base dinning hall that has large walk in refrigerators.
