Vanilla Sponge Or Madiera Cake ????

hi,

i manily do chocolate cakes and have THE most perfect recipe that no one has had a bad thing to say about but when someone asks me for a normal sponge cake i panic slightly. i use a madeira cake recipe that is
300g butter
300g sugar

3 tsps vanilla

5 eggs
125ml of milk
i tend to add more milk as the mixture is so thick and im worried it will turn out dry the cake tastes nice and still haventy had any complaints but im thinking there has to be a better recipe out there. this one tends to not cook completely or is that because im ading too much milk. i says to bake for 1hr 20 mins but mine usually end up in the oven around 2 hours at 160 degrees. i just need someone to tell me this is right or to point me in the right direction. i have tried other recipes and my friends have told me they turn out dry.

I have considered just using a victoria sponge recipe but im worried the weight of the marazipan and icing will make the cake collapes.

please help as i have 4 cakes to do as normal sponge and i want to get them right x
