Storing A Fondant Cake

I am making a three tiered fondant covered cake for a wedding on Saturday night.  I plan to cover the cakes Thursday night. There will no be any perishable fillings, just butter cream. How do I store the cakes, covered or just left out uncovered?

Just kept at room temp - either UNcovered or with a very light plastic loosely thrown over it. Or you could box each tier if putting it together at venue.

This is a hot topic with decorators. Some say never refrigerate a fondant covered cake, some say it's ok. I ALWAYS refrigerate my fondant covered cakes and have never had any issues, except the one time I didn't and it was extremely hot & humid...bad combo!

If you have room in your fridge, put it in, if not, you'll be ok as long as it's not 108 outside! icon_wink.gif
