And not need refrigeration?  I know that unopened buttermilk powder is shelf stable, but it does require refrigeration once opened.  Anyone have experience with anything like this?  I was thinking that powdered buttermilk would give a bit of a tang and taste cream cheese like.  I do have various shelf stable cream cheese recipes (including Earlene's) but was wondering on this. Powdered buttermilk certainly DOES NOT taste like cream cheese.

 

Also, once any dairy product is mixed with liquid its shelf property changes, depending on what else is present.
