AHi, I know this has nothing to do with cakes but does anyone know how to make a simple hard peanut brittle. Thank you

I make it every year :)

 

step 1: butter a cookie sheet and keep it warmed in the oven

 

step 2: 1 1/2 tsp baking soda mixed with 1 tsp water and 1 tsp vanilla --- set aside. You will need it at the end.

 

step 3: 1 1/2 c sugar

1 c water

1 c light corn syrup

cook over medium heat, stirring occasionally, to 240 degrees on a candy thermometer.

 

step 4: stir in 3 tbsp butter

1# shelled unroasted peanuts

cook, stirring constantly until it reaches 300 degrees on candy thermometer. Watch carefully-- it will burn easily.

remove from heat and immediatelt stir in baking soda/water/vanilla mixture. It will really boil and sizzle so be careful !!! Pour mixture onto previously warming cookie sheet, making sure it's spread thinly and evenly. Allow to cool (I'm impatient and put it in the frig). Drop cookie sheet onto counter and give it a slight twisting motion to break the candy into pieces. Enjoy!
