If you use an electronic cutter for gum paste like the Silhouette, you may like this tutorial. You can design and cut your chevron, or any design the entire width of your cake and apply it to the side of the cake. I tried this technique this weekend and it worked perfectly. Chevrons are so popular, but difficult to make. This sure makes this much easier.
