Does Removing Or Adding Dessicated Coconut From A Recipe Affect The Cake?

I have a great coconut cake recipe and would like to try to transform it into a vanilla cake.  It has such a perfect texture and settles out completely flat so no trimming off the top is needed before stacking or layering.  Just wondering if the removal of the coconut will change the moisture content of the batter...
