Filling For Carrot Cake Other Than Cream Cheese!

I'm working on the plan for my wedding cake for this summer, and my favourite cake is carrot cake by far.  Unfortunately, while my fiance enjoys carrot cake, he really doesn't like cream cheese (or cream cheese icing).  I'm willing to compromise by using another kind of filling/icing, but I'm wondering if anyone has suggestions (and possibly recipes!) for other fillings/icings that would work well with carrot cake!

I just made Martha stewart's ginger carrot cake, with the addition of 3/4  cup pureed drained canned pineapple.  I did use a cheesecake filling, but frosted it with pineapple buttercream.  It was wonderful!  I think the pineapple buttercream would work nicely as a filling, especially if your carrot cake has pineapple in it.

Pineapple buttercream sounds pretty good!  Thanks!  I'll have to try experimenting with that...

Pineapple pie filling cooked with extra cornstarch so it sitffens up well.

 

Pecan caramel filling.

 

Lemon or lime curd.

 

Ginger jam, or just some ginger liquor added to buttercream.

I would steer away from pineapple if it's for a wedding, a lot of people don't like it, it's also a relatively popular allergy.

I usually do whipped white ganache or ginger buttercream.

I would try with white chocolate ganache

My carrot cake recipe has a fair amount of orange juice in it, so I have used an orange SMBC, which actually went very well with it.  I really wanted to try a ginger buttercream - scrumdiddycakes, what do you use for your ginger bc?  I've never seen a ginger jam or ginger liquor around here.

I just puree fresh ginger and just add it to my vanilla bean buttercream, I use about a tablespoon per batch.
