Crusted Butter Cream V/s Fondant

Hi members,

 

I am a beginner at cake making and wanted to know if we can use crusted buttercream instead of fondant for decorating a cake. If yes, is it as good as fondant?

 

Also can it be used for all the other decorations or just the base coat?

 

Is there any tried and tested crusted buttercream recipe?

You can use any buttercream or whipping cream to both ice and decorate your cake.  With American style buttercreams, which typically crust, you can pipe all kinds of decorations.  I recommend you take a look at the Wilton site for buttercream ideas and piping methods.  You can also make a meringue based buttercream, which doesn't crust, and you can use that for the final coat and also to pipe with.  Whipped cream is ok for some piped decorations but not really fine piping.
