I am making my nephew's first birthday cake the end of this month. I dont have the time nor money too do everything from scratch. I need a good recipe for yellow and lemon cake mix. I heard of using buttermilk and pudding. 

 

I am also doing a small cake for my nephew but he has an egg allergy. What can I substitute for eggs in cake mix?

 

How long will cake box cake stay fresh? For example, if I start baking Monday, will they be fresh and moist for the party Saturday?

AI learnt something very cool today that wil help you. Cake mixes where invented during WWll and where designed to be made with just water due to egg and ail shortages. Oil and eggs where add to the recipes on the box for PR reasons. People did not think it could be go with out. I have not tried it yet but my friend has and she said it was great. I don't now how nice it would be after 6 days.

Baking Monday for a party Sat is just too far in advance unless you freeze the cake.
