I'll try again. And thanks for the comments. I never thought of the other applications for such a cake. For grandparents, or teachers---how personal that would be. Good idea! Well, here goes the 2nd attempt.

By saying"Be Kind" it was meant as something playful. I don't mind harsh criticism at all. I only want honest people and quite a few have responded with great comments and critiques and I am still a very happy girl. I know I am not the best and I am always wanting to learn. Thanks, Elcee. Your comment was just what I needed to finally stop my fruitless search for a good RV recipe. Apparently someone else shares my same feeling so I know I am in good company.thumbs_up.gif I've never offered it, but now have the cakeballs to refuse a request.

Count me in on the RV. I just don't 'get' it.

 

It tastes like cake with a bitter edge to it because of food coloring. I'm not sure I 'get' how RV can be a cake flavour. I don't offer it and won't eat it.

I live in GA and don't really have the luxury of not selling RV. It's a southern treat that's in demand for most people here it's probably requested about 60%. It's my most requested cake by family and friends. I've never had complaints of dry cake. If any one wants to try my recipe, here it is. For those that don't, to each there own. I'm not trying to change anyone's mind or incite a riot...just passing along some information.

 

1 cup butter

2 cup sugar

2 eggs

2 Tbsp cocoa powder

2 oz red food color (or ameicolor red gel mixed into approximately 2 oz of your preferred liquid or natural color equivalent, just don't forget to replace the liquid)

2.5 cup cake flour

1 tsp salt

1 cup buttermilk

2 tsp pure vanilla extract ( I use 1 tsp store bought and 1 tsp of my homemade extract)

1/2 tsp baking soda

1 Tbsp vinegar (white or cider)

Michelle, I just printed out your recipe for RV. I titled it "One last chance Red Velvet". I'll give it one more try for I realize that it really is a popular flavor. I can appreciate it more when I think of it as a buttermilk cake, not really a chocolate one. So it looks like we'll be sampling a RV sometime this week. Thanks for the recipe and your endorsement. Here's hoping....

It's still bitter but more like white chocolate? Anyhow everyone at my husbands work raved about it. Almost got a wedding order But they already paid their $600 deposit so even though I hate RV and have problems with the recipe it's a Keeper for me. I also live in tx so I'm sure ill get requests.

Hey guys, I forgot my directions for my RV...silly me.

 

Yields approximately 8 cups of batter

Preheat oven to 350 degrees F.

 

In a mixing bowl, cream the sugar and butter, beat until light and fluffy. Add the eggs one at a time and mix well after each addition. Mix cocoa and food coloring together and then add to sugar mixture; mix well. Sift or whisk together flour and salt. Add flour mixture to the creamed mixture alternately with buttermilk. Blend in vanilla. In a small bowl, combine baking soda and vinegar and add to mixture. Pour batter into greased and floured pans. Bake until a toothpick inserted into the center comes out clean. Remove from heat and cool completely before icing.

I'm not a fan of the "lots of chocolate" RV. I too find them a bit bitter. Not to mention, the more chocolate, the less you can obtain a pretty red color. The chocolate also covers up a lot of the buttermilk and vanilla flavor, not to mention the tangy bite it has from the vinegar/ baking soda combo.
