I'm making a devils food cake that has to be covered in fondant for my class tonight, I was going to fill it with chocolate buttercream but my husband doesn't like the butteriness of SMBC (we're European!). He also doesn't really like the non-sugariness of ganache. I thought about doing a milk chocolate ganache, but what would I fill the cake with? I don't want to keep the cake in the fridge since it will have the fondant on it.
Also, we can't do instant puddings etc.
I use caramel filling and caramel frosting for devil's food cake. My recipes are at home and I'm not, but the filling is something like this, but with not nearly so much powdered sugar:
