Cake And Catering Displays

I have mostly done cakes for friends and family, and only recently expanded to a slightly larger client base. I see beautiful table displays for cakes and other catering here at cakecentral and different food blogs. My question is this: who is responsible for these types of displays? The party planner/host or the caterer? I am curious since I want to make sure I showcase my goods as nicely as possible, but purchasing materials for unique displays seems costly and a bit wasteful since I don't know if I will be able to reuse them. I just wondered if this is something that is expected when someone hires me. Any advice you can offer would be greatly appreciated.icon_smile.gif

as far as i ever go is either making petals or taking fresh flowers apart and sprinkling them around the cake

 

if the bride requests

 

once i went and lit all the candles in the room for the b & g--the reception was starting and all these lovely candles needed kindling so... 

 

typically that's somebody else's department
