There was mold on the bottom the day she bought it or a week later since you say the cake was a week old?
If it was after she had it for a week, (and I don't know much about a madeira cake) I would presume that it was due to improper storage on her part... not on mine...
If you had it for a week before you sold it to her (and again, I dont know much about madeira cakes) I would presume that it was due to something you did...
As for why mold... It happens to many things exposed to the air...

Environmental conditions can be such that mold will appear in a day. Week old cake, no matter who's "week" it was, could very easily develop mold.
