How Long Can I Store These In Fridge?

I am going to be making chocolate cupcakes with chocolate ganache filling and topping. Then I'm going to cover them in fondant and put a little design on them. They are due this Saturday. Can I make them today and then put them in the fridge until Saturday? I don't work with cupcakes very often. Will they dry out if I make them today?

I think they'll stay fine outside.

You mean outside the fridge? The ganache won't melt the fondant or anything will it?

You will be much better off keeping them at room temp - properly covered than putting them in the frig.

Putting cakes in the frig dries them out icon_sad.gif
Put the cuppies in a cake box and then place in a plastic bag or wrap in plastic cling film. Keep out of the sun. They should be fine.

It would be best to bake your cupcakes and put them in the freezer. Prepare your ganache and fondant ahead of time but assemble on Saturday.
