Hi All

This is my first time to use the CK Royal Icing Mix. The directions say to mix 5 tablespoons of water with 1 lb of mix. Is that correct? It doesn't sound like enough and sounds like it will be crumbly.

Also, how long do I mix it for? It says beat until stands in peaks? Since this is my first time, I would like to know how long others beat theirs for.

Thank you in advance for any advice you can give.

I believe I always a a little more water than that though I can't recall how much. But I did mix it for about 7 min until I got stiff peaks.

5 Tbs is about right. I mix it for about 7 minutes or so.. until it stands in peaks as you said. After you add water mix a few minutes then scrape bowl, then mix away. I usually store it in an airtight container, I take what I need and sometimes I will add water to if I need to thin it down for filling in cookies designs..

fyi..it's cheaper to buy meringue powder and mix it with powdered sugar. 3 Tbs meringue powder to 1lb sugar.
