I have a wedding coming up where the bride requested a "whipped strawberry filling" kind of like a "strawberry chiffon" filling for her cupcakes. Here's the kicker: they need to be room temp stable and not need refrigeration. Any ideas or favorite recipes? I'd greatly appreciate it! I'm stumped. Everything I've found needs to be refrigerated. These will be going inside white cupcakes with vanilla buttercream and will need to sit out on the counter the night before (in containers of course).

Thanks in advance,
Angie

I use Whimsical Bakehouse House Buttercream and mix in strawberry preserves. If you google the WBH recipe or search in the forums on here it should come up.

This one is really good. Use Frostin Pride or Bettercreme in place of the whipping cream and it can stay at room temp for up to five days. Make sure you sprinkle the strawberry jello over the liquid and let it totally dissolve before whipping. http://cakecentral.com/recipe/strawberries-n-cream-mousse
