I will be attending my first ICES convention next month and was thinking about taking a cake to place in the cake gallery. I will be traveling from VA to Reno and we are arriving 4 days before the convention to explore the area. I know that a real cake could not possibly make the trip and last long enough to make any kind of presentation. I am planning on a cake dummy but would love some input on durable finishes. Fondant vs. icing? I will be airbrushing the finish. The cake I am planning on making is the crab pot cake in my gallery. I will attempt to post the link. Any thoughts, suggestions or input would be greatly appreciated!!

Defiantely fondant for traveling...there is a link on the ICES site called *Cakes as luggage* - has tips on making a cake to travel on a plane and how to pack it. I am going to take one too, not sure what yet....gotta get busy on it though!
