When I cake description says "Cheese Cake Filling" does that mean real CHEESE CAKE, or is there a different way to make Cheese Cake Filling? If anyone could help me with this I would be truly appreciative.

There are a few different ways of doing it.

First, you can bake a cheesecake, get it cold, torte it, and use it as a filling.

Second, you can use a no-bake cheesecake recipe with a few modifications and get a filling. I have this recipe if you pm me.

There are a number of ways to do it artificially, but I can't help you here.
