I have never made a brick house before- would you guys suggest using the imprint mat for the bricks, cut a piece to fit and freeze for a few minutes before slapping onto the walls? One piece for each side? Any suggestions appreciated!

What size cake is it? You can use the brick impression mat and slap it on the cake, but you can also just impress the buttercream on the cake if you firm it up then press the mat into it.

I have made a brick house before. If you look in my pictures, you can see the cake. What I did is use the Duff brick impression mat and did them in panneled sections like you said. Let me know if you have any other questions.

thanks! I forgot to say it is a fondant cake, and small (8" square, but taller). Its hard to understand how the fondant doesnt slide down off the sides if it is in pieces!
