I am doing a 2 tier cake for a birthday party. The client requested standing letters .The cakeboard will be covered with "sand (brown sugar)". How do i get the gumpaste letters to stand up on the cakeboard where the sand will be?

I would make the letters several days in advance so they are really hard and dry, and then use chocolate to 'glue' them standing up on the board. After they are in place and completely dry, add the 'sand' and push it around the letters to hide the chocolate glue.

You could also use some royal icing.
