Hi everyone! I'm working on a fondant cake for tomorrow (my first one) and have a quick question. I need really rich chocolate icing for the cake. I wanted to do a chocolate cream cheese frosting, but wasn't sure if it has to be refrigerated? I was told that the powdered sugar acts as a preservative, and anytime a frosting recipe calls for butter, milk, cream cheese, milk, etc. that it would not need to be refrigerated. Just wanted to verify this before I did this and then ruined the cake, lol. Thanks!
I wouldn't chance it. Creme cheese is dairy and needs to be refrigerated.
Thanks, that's what I was thinking too. I just really wanted to use chocolate cream cheese frosting. I just can't find a GOOD chocolate frosting recipe that doesn't have dairy of some sort in it....all the ones I've tried have just been ok, but nothing special.
Have you tried the (can't remember the brand) cheesecake flavored oil? It adds a cream cheesey flavor without the required refrigeration. I was skeptical, but tried it and actually quite liked it.
