Hi Everyone,

I use the basic WASC and Chocolate WASC recipes for all my cakes. This week I am making 450 cupcakes for my daughter's end of the year dance/party. I want to bake them on Wednesday and Frost on Thursday. But since today is a holiday I was wondering if I can make the batter ahead of time and store it in the fridge so all I have to do on Wednesday is scoop it into the pans. I was curious if anyone had done this before and had good luck. I'm willing to mix it all on Wednesday if I need to I just was curious if I could make the batter in advance. Thanks!

Becca

I have frozen those two batters, then thawed and used and they were the same as with just made batter. Don't know about holding in the fridge that long. Maybe someone with more experience can address that.

Most batters hold up well in the fridge. You shouldn't have a problem.
