I have a wedding cake on my schedule for summer which will also be an outdoor wedding. They're asking for cream cheese icing (inside the cake), Should that be a concern for an outdoor wedding in summer weather? Or will the icing be ok because it's on the inside of the cake covered in fondant? Should I be advising her to go with buttercream instead?

Could you make butter cream and add Lorann Cheesecake oil and have that be acceptable to your bride? I find that if you add the Lorann oil and let it sit for a bit it does give a cream cheese like flavor to the icing. Just don't add so much that it is cream cheese like right away. Otherwise, after it sits for awhile it goes from a hint of cream cheese to something that is cream cheese like but tastes a bit artificial.HTH
