I am decorating a cake this weekend, and the customer has requested a chocolate cake with ganache filling covered with MMF. I have only ever iced a cake with buttercream, and have never attempted to ice with ganache.

In order to get a smooth layer of bc, I've always refrigerated my cakes after they are filled. Now that the cake is filled with ganache, I am afraid to refrigerate it because I feel the ganache will harden (especially if I leave it refrigerated overnight with the bc), and be too hard when the customers eat it!

So my question is this... Will my bc harden well enough if I do not refrigerate the cake over night?

PLEASE HELP!!

Thanks in advance icon_smile.gif

I have used Ganache as a filling before also, if you are using buttercream on the outside of the cake, pipe a buttercream dam between your layers, fill with ganache. the cover your cake with buttercream as normal, I also put my cake in fridge for the buttercream to firm up, as long as you take it out before delivery of cake, it will soften back up !!
