I hate making cupcakes because the batter is so messy when filling the cups.
I pulled some batter out of the freezer today and partially thawed it on the counter . ,
It dawned on me to why not partially freeze the batter in a zip lock bag before filling the cups in the same day just to make it easier not because it was left over .
It definitely makes it easier-neater to get the batter in the cups. Just snip off one corner of the bag and pipe in the cups. If you are doing minis snip off a smaller point ,

Also if you are making mini cupcakes and you want to see if they are filled equal its easier to tell if you pick the pan up and look that look at the top down from the counter .

Ok some of you probably already know . But we have a lot of newbies here too,

Thanks for the tips, Cakery2012! I tried the icing bag method the other day, too, and it was a lot less messy! The idea of looking at your baking cups from the side instead of from the top to see if they're evenly filled is a good one, too. I never can get my cupcakes all the same size.
