How Much Cake And Fondant Do I Need?

I am making two cakes for my friend and her mom's birthday party. I'm making a jewelry box cake for her mom, but wasn't sure if 3 carved 9 x 13's would be enough for should I do four. I'm just going to do styrofoam for the lid. Also, I made one recipe of Michelle Foster's fondant to cover it and the lid. Will that be enough? I want it to be slightly larger than a shoe box.

As for the second cake, I'm making a horse head cake and want to make it as much like this one as possible http://cakecentral.com/gallery/1250369/horse . I'm just not sure how much cake to make, how many layers for dimension, and what shapes. I also made another recipe of Michelle Foster's fondant to cover it. Will it be enough? I want it to be like maybe 14 x 14 or something like 'that.
