i used to bake my cakes the day before decorating them but as business picks up i am finding it hard to do, i have one cake due friday and two due saturday which basically means i will be baking and decorating from wednesday onwards can everyone let me know what they do, do you freeze or make them fresh????????

Freeze them, but be sure to wrap them really well.

i have never frozen a cake do you then have to defrost it before you decorate?

I freeze everything I bake. Usually a week before. I pull the out, fill, assemble and re-wrap and let come to room temp overnight. Then trim, ice and decorate. My customers rave over how moist they are. Just be sure they are wrapped well. I know a lot of people wrap in plastic wrap and foil. I use two layers of plastic wrap and then re-use it after I fill them. No problems with drying out.
