Hello,

I am still fairly new to decorating cakes and I am having a hard time finding the right icing to use for my fondant cakes. I have used store bought icing which has worked, but I find my cakes are not as "smooth" on the sides and tend to get a "wavy" effect. I have also tried a homemade swiss meringue buttercream recipe which worked great but I was not too fond of the taste. I am working on icing and leveling my cakes better but I did find that the homeade buttercream worked WAY better then the store icing and was much easier to cover with fondant.

Does anyone have any buttercream recipes or any other icing recipes they could share that has worked well for them under fondant covered cakes?

I use the "Butter Cream Dream" recipe from here on cc.
